Now as chef and owner, his goal is to develop a team that will enable Halyards and his other restaurants to expand into a family of restaurants. He does this by using the freshest resources.  His fish come from local fishermen; his sweet, wild shrimp come from shrimp boats off our coast and his clams come from nearby Sapelo Island.  But, don't overlook his wonderful meats, too.  All menu items are special because he cooks his seafood and meats with the freshest produce from two local farms and a food co-op.  Chef Dave brings all of his tasty, specially selected food together in his magical kitchen at Halyards to produce a cuisine that can be described as "Southern with a splash from the ocean."
One Day Cooking Class
Join Chef Dave at Halyards Restaurant for an afternoon cooking class.  The restaurant is closed during the afternoon, but Chef Dave is opening it just for you and your private lesson.   You will walk with him behind the scenes of his beautifully appointed restaurant, directly into his private chef's kitchen, put on your apron and learn directly from a top chef how to take the steps to make an exceptional meal!
Chef Dave is personable, patient and encouraging so even first time cooks will learn while having fun. The size of this exclusive group is limited. We will only offer reservations for 6 - 8 people
Classes are usually taught on a Tuesday and Saturday each month starting at 11:00 A.M.  The hands-on lesson takes about 90 minutes and then you will sit down to eat your beautiful creations until about 1:30 P.M.  Your meal includes all of your delicious food, side dishes, tasty dessert and two glasses of a great wine especially selected by Dave! While you eat, sit back and enjoy the lovely restaurant, the delicious food and the glow of this unique experience.

Walk into Chef Dave’s “Oriental Kitchen” and have fun with us making popular dishes that will spice up a supper at your home or brighten a fun party with your friends.  Roll up your sleeves so you can make colorful egg rolls with varied fillings.  (And yes, you’ll make a great sauce to go with them!)  You probably love ordering pot stickers, but if you know Chef Dave’s secrets, you can cook them yourself.  And don’t start thinking that a stir fry is just a stir fry!  Chef Dave will teach you how to make it with pizzazz and that makes all the difference – it will be tender and moist with the perfect Asian flavors.

French Onion Soup, Coq au Vin, Beef Bourguignon

Yes, this class is all about well known and well loved French dishes!  The main ingredients are important, but it’s the seasonings and cooking methods that makes the difference in a classic dish.  Chef Dave will teach you to prepare these dishes with the “ahhh” factor.  Each dish is a stand-alone star, but you’ll also have wonderful background side dishes to round out the meal.  So, join us in the French Bistro for a delightful afternoon of cooking, eating, and a special French wine!

Chef Dave has a special place in his heart for the local seafood and the dedicated fishermen who provide for us!  Chef Dave wants to teach you about where our seafood comes from and the environmental partnership that assures it will be sustainable.  As you stroll outside Halyards and view the various boats and fishing gear we use locally, you’ll also have a chance to hear our special guest, Captain Charlie Phillips, talk about his experiences as a commercial fisherman along the Georgia coast. 

But, of course, this is a Halyards event so there will also be great eating!  Watch and talk to Chef Dave and his assistants as they steam, grill and sauté a variety of fish including grouper, snapper, sea bass, trout, redfish, and flounder.  You’ll also see them preparing local shrimp and local Sapelo Clams for you! (Be sure you pick up the recipe sheets so you can cook this same wonderful seafood at home.)

Hot off the grills, take a plateful of delicious seafood inside Halyards and add freshly grilled vegetables, crispy green bean salad, and Chef Dave's special cole slaw to your plate.  And please accept a glass of wine or champagne as you enjoy your meal! 

But wait -- to finish this special meal, Pastry Chef Kristen is working her sweet magic on Carrot Cakes and Red Velvet Cakes for you and your friends!  What a great way to finish a lovely afternoon!

Get ready for really great stuff! For example, you’ll make your own tasty, stuffed ravioli from scratch!  It really isn’t that hard because Chef Dave will teach you a faster technique to make this Italian favorite.  And you’ll make peppers more interesting by stuffing them to create mild or spicy flavors. And you’ll stuff manicotti and flounder so they will stand out as exciting, new main dishes!  Are you thinking about dessert yet?  How about learning a special sweet stuffing for cannoli? More About Chef Dave    
Chef Dave's cooking experience dates back to school days in Michigan and his college days at the University of Georgia.  After university, he graduated from the New England Culinary Institute in Vermont.  Fortunate enough to meet Chef Christian Delouvrier while in school, he moved to New York City to learn from Delouvrier at Les Celebrites in the Essex House Hotel.
He then gained more valuable experience while in New York. "I was lucky enough to work for some great chefs who pride themselves on training the next generation of chefs." His teachers included Michael Romano at Union Square Cafe, Erik Maillard at the Mark Hotel, and John DiLeo at Zoe. After almost five years in New York, he headed to the South. "I wanted to go back to the South," he pleads.
I think the thing I enjoyed the most about the class was seeing Dave enjoy it so much!  I thought he did a great job of instruction and hands-on during the class.  It's one thing to hear and watch but even better to get in there with your hands and have him assist and encourage you along the way.
